Course Summary

This is an Entry 3 vocational programme designed to help you to develop the skills and attitudes to succeed. 

This study programme will enable you to work towards an Entry Level 3 Certificate in Introduction to the Hospitality Industry, Functional Skills Maths and Functional Skills English, and to undertake work placement and enrichment activities.    

Successful completion of this then gives you the opportunity to progress to the Introductory NVQ Certificate in Food Preparation and Cooking.

Entry requirements

The course is aimed at learners with grades F-G at GCSE - or no GCSEs - who would not at this stage be ready to achieve at Level 1 study. Their initial assessment would most likely be at E1/E2 in English and Maths. 

You should:

  • Have a passion for hospitality and catering
  • Have a good attendance record at school or your previous training provider
  • Need enhanced support to transition into College

All applicants will have an individual advice and guidance interview to assess their needs and suitability for the course.

Course Content

You will cover a variety of units in:

  • Introduction to the hospitality industry
  • Customer service in the hospitality industry
  • Food preparation and cooking
  • Essential knife skills
  • Meal planning and preparation
  • Using kitchen equipment
  • Food safety

You will also cover Functional English, Functional Maths, and enrichment and work placement activities.

How will I be assessed?

You will produce a portfolio of evidence and will be supported to work towards numeracy, literacy and personal targets which will be reviewed every half term.  You will also sit a Functional English and Maths controlled assessment.   Any inclusion and support needs will be assessed and reviewed throughout the year and we will work hard to give you the support you need.

Are there any additional costs or specialist equipment required?

You may be asked to make a voluntary contribution to trips throughout the year and will also need to purchase a chef's uniform.

What can I do after this course?

Further Study

  • Introductory Certificate in Food Preparation and Cooking
  • Introductory Certificate in Food and Beverage Service
  • Continuation of maths and English studies


You can progress to roles in a kitchen environment or a front of house setting.

Work experience leads to an apprenticeship

Student Pavandeep Tiwana is all set for taking up an apprenticeship following a successful work placement organised through her Derby College Transitions course.
Eighteen-year-old Pavandeep said the year-long course had boosted her confidence and put her on the road to her ideal job.
Transitions Level 1 is designed to support young people to find their future career pathway and to develop their studies.
Pavandeep, who has a younger brother, said she wants to work with children and aims to become a nursery teacher.
She said her tutor helped find her work placement at the Play Corner Day Nursery in Derby. Her time there has gone so well that she has been offered an apprenticeship, starting in September.
The Sinfin teenager initially targeted a child care course but did not have the necessary qualifications.
Instead she took Transitions and said the combination of work experience and three days a week study was paying off. Now she is looking forward to completing the course and launching her chosen career working with children.

She said: "I'm really happy about it. The course has given me a taste of what the world of work is like. I'm enjoying my studies and I feel like I'm on the road to a job I enjoy."
