Course Summary

The Advanced Technical Diploma is a unique course that only a few establishments are currently offering. It carries UCAS points for further study at higher education level. 

This course can help you progress to a more senior chef’s role and is a great progression route from the Intermediate Diploma in Professional Cookery. 

You will be producing a variety of complex dishes at an advanced level to enable you to work in fine dining establishments or progress further in higher education.

Entry requirements

You will need a Level 2 Diploma in Professional Cookery and GCSEs in English and Maths at a grade C (4) level.  

Applications from mature students with relevant work experience are also welcomed.

It is essential that you show a commitment to maintaining high standards of attendance.

Course Content

You will gain a high standard of culinary skills and will cover a variety of topics including:

  • Legal and social responsibilities in the professional kitchen
  • Financial control in the professional kitchen
  • Stocks, soups and sauces
  • Fruit and vegetables 
  • Meat and offal
  • Poultry
  • Fish and shellfish
  • Farinaceous dishes
  • Desserts and puddings
  • Paste products
  • Biscuits, cakes and sponges
  • Fermented products
  • Chocolate products

Work experience will also form part of your study programme.

 

How will I be assessed?

Assessment will include a variety of methods such as assignments, exam and practical assessments..

Are there any additional costs or specialist equipment required?

There will be an additional cost for uniforms.

What can I do after this course?

Further Study

You could consider progressing to a Foundation Degree in Hospitality Management.

Compliments to the award-winning chef

Apprentice Jordan Green scooped the Young Chef of the Year title in the Derby Food and Drink Awards – an accolade which he hopes will fast track his career ambitions.

Jordan was among a group of full-time Catering and Hospitality learners who progressed to an apprenticeship with the College’s Engine Shed restaurant and training kitchens at the Roundhouse campus.

His apprenticeship opened doors to many opportunities – including a work placement with Derby’s award-winning Restaurant Zest. He also took part in a European work experience programme in Denmark, spending five weeks at the Danish Meat Trade College in Roskilde alongside learners from Estonia, Italy and Finland.

I really want to be working in fine dining and to learn from the best in the industry. Hopefully winning this award will help me at the start of my career.
